The pressed juice is pumped directly to a steel tank and settles for two days. It is racked to four neutral French oak barrels for fermentation. We de-stem the fruit into steel open top fermenters. Cold soak for a day, as we begin punchdowns at the first signs of natural termination occurring. Punchdowns twice a day for three weeks until Wine is basically dry. Rack the free run juice and press out the remaining juice from the skins. Juice will then age in neutral oak for 16 months. Wine was racked three times throughout its aging to give some oxygen to the wine and get it off it's gross lees (first racking). Racked to tank prior to bottling, bottled unfined and unfiltered. Small doses of SO2 were used during Barrel aging and just prior to bottling.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eThe Wine:\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eFirst hits you with a touch funk with fresh red berries, it all opens up in a couple minutes. The fresh fruits also hit on the pallet, with a nice kick of freshness, aka acid. But not to be outdone, there's still a nice tannin structure to hold everything together. Overall tastes great now, or you can keep the bottle open for a day or two, or even wait a couple years to open. All are solid bets! We like to drink a lot of our wine young, lots of fruit and freshness. Overall another year with little rain gave us a little more concentration on the fruit, but lower yields. Also having a random high school background in journalism, lets make a Magazine style cover. This way there’s always a consistent theme of logo\/ vintage\/ alcohol\/ etc. listed, but we then get to play with themes\/ styles\/ colors. And to kick it up a notch, each bottling should have an Issue, as many magazines tend to have some sort of call out to what’s going on in them. For this particular label, I always gravitated to the wine style being bottled lightning, so The “Lightning” Issue stuck pretty quick and easy. Also the use of “Thrasher” Magazine style font for calling out the Chenin was a no brainer given the them of the label. Lastly I’m a big fan of breaking rules, so you using all different fonts for each wording on the label was a must. It reached up to SB County causing a heat wave for over a week. Typically heat lasts two-three days, this was a little stressful on the wines. But luckily Mourvedre is a late ripener and we are able to avoid much for problems from the storm.\u003cspan\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eThe Process:\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eThe grapes were hand harvested at night and brought to the winery in the early morning. We de-stem the fruit into steel open top fermenters. Cold soak for 3 days, we begin punchdowns at the first signs of natural fermentation occurring. Punchdowns four times a day for three weeks until Wine is basically dry. Rack the free run juice and press out the remaining juice from the skins. Juice will then age in neutral oak for 6 months. Wine was  racked to tank prior to bottling, bottled unfined and unfiltered. Small doses of SO2 were used during Barrel aging and just prior to bottling.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eThe Wine:\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eSmells of watermelon candy, and looks almost similar to a melted watermelon jolly rancher. Pops some Bing Cherry, Red Lightning, Juicy Tannins, with small hints of Organic Potting Soil. Still a fresh amount of tannin on the pallet, it lets you know as you taste it that its a red. Not to be fooled by the color. This kept the temp and moisture up higher than normal. With Clairette being a Rhone varietal, we feel it helped weather the heat \u003c\/span\u003edecently. Minimal damage was noticeable on the fruit and yields were super good. Being our first vintage, we can only wait to see what this varietal has in store.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eThe Process:\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eThe grapes were hand harvested at night and brought to the winery in the early morning of October 3rd. We dump the fruit into the bladder press and run the press cycle for 3 hours. The pressed juice is pumped directly to a steel tank and settles for two days. It is racked to neutral French oak barrels for fermentation. We let the juice naturally ferment over the course of 5-6 weeks. Around the three week mark, we consolidate the barrels and fill them up completely. From here we top every two weeks and let the wine evolve. The wine is then racked super clean to tank on Jan 29th, then bottled unfined and unfiltered on Jan 30th. I thought, \"Wow, this kind of looks like the Q*bert game from back in the day.\" So I Started with that idea, but as the design progressed, the pattern also had wooden children blocks style to them. Right away it reminded me of the only Pro Skateboarder that I share a birthday with, Jeff Grosso. One of his first Pro skateboards from the 80's was a cartoon doll playing with wood blocks that had his name on them. So that transitioned Q*bert to the kids block style and having the Clairette name sake on. Also there's a little heart on the blocks, which the doll on the Grosso board has as well. I've always been stoked on Grosso's skating, as well as a show he made on YouTube titled \"Love Letters to Skateboarding\". This rain plus a cooler Spring pushed the vines to wake up a little later than what we normally see. The growing seasoned proved to be on average with very few heat spikes, even the classic Labor Day heat never came.
